3121 Jazz Cuisine… Featuring dishes from around the world created by Prince’s Executive Chef, Lena Morgan in concert with the World-Class Culinary team and Chef de Cuisine Honorio Mecinas at the Rio.

3121 Jazz Cuisine offers dry aged cuts of premium beef, organic graze fed lamb and fresh wild –caught seafood, all grilled over our olive and mesquite wood. We also utilize the freshest available organic produce to complete the dishes.

Featured dishes include Grilled Center Cut Filet Mignon with Mushroom Truffle Butter and Foie Gras Wine Reduction, Pine Valley Organic Lamb Duet with Roasted Cepes and Mint Lamb Jus and our more exotic Furikake Dusted Black Cod served over Spicy Gomoku Fried Rice and Ponzu Glaze and Wild Alaskan Salmon Encrusted with Cilantro/Jalapeno Relish with Soft Herb Chevre Polenta and Pineapple Salsa.

Signature desserts are enhanced by our Pastry Chef team, Jim McNamara and Vincent Pilon, to infuse homemade classics into elegant representations.  Our Mochachino Tower – A composition of Espresso and Kahlua Soaked Chocolate Cake, Layered amidst a Filling of Mascarpone and Caramel in a Chocolate Box – our version of Tiramisu. Don’t forget the Carrot Cake, loaded with Pineapple Chunks and Toasted Coconut Shavings nestled between layers of Orange Infused Mascarpone Cream.

The restaurant also offers a 6-course Tasting Menu that includes a mélange of our best dishes, available with or without wine pairings.

3121 is proud to offer a changing seasonal menu along with our extensive wine list and specialty cocktails designed just for us, designed by Executive Mixologist, Anthony Alba.

3121 is located behind the High Limit Slot Salon. Three private dining room choices that seat up to 14, 50 and 60 are available. Live music will be performed on Wednesday, Friday and Saturday Nights.

All-American Bar & Grille
The new All-American Bar & Grille features “Rio Dry Aged,” our delicious in-house steaks famous for their taste and sizzle.

From crisp salads, delicious sandwiches, fresh seafood and “Rio Dry Aged” Angus steaks, even the heartiest appetite will be satisfied at the new All-American Bar & Grille. All of our steaks, burgers and fresh seafood are prepared on our open mesquite wood grill.

We feature a contemporary atmosphere with fireplaces surrounded by two waterfalls in the dining room. We also feature a sports bar with over 10 plasma TVs where we serve appetizers, fresh squeezed juices for an afternoon margarita and our famous Angus beef hamburgers.

Our chefs work hard to put that extra touch on every item served. Our mouth-watering in-house dry aged steaks, “Rio Dry Aged,” are not to be missed!

Antonio’s Italian Ristorante
The inviting atmosphere of Antonio’s Italian Ristorante includes an attractive open kitchen that allows guests to watch the Rio’s top chefs prepare decadent Mediterranean dishes and extravagant desserts.

From Osso Buco Milanese to Spaghetti Con Aragosta, Antonio’s provides a literal culinary voyage to the best of Old Italy. A strolling guitarist completes the experience.

Make your evening special and have dinner in one of Antonio’s cozy booths, or call in advance and reserve one of our private rooms for large parties. Two private dining room choices that seat up to 15 or 26 are available.

Experience signature south-of-the-border cuisine at Bamboleo. Bamboleo pays tribute to the exotic flavors of Mexico, Brazil and Argentina with an extraordinary casual dining experience.

Set in a contemporary yet earthy ambiance, guests are invited on a journey south of the border where old traditional recipes are brought to life and prepared to perfection.

From a spicy Chile relleno to succulent snapper topped with red Vera Cruz sauce, Bamboleo’s entrees combine tradition and an unmatched standard of quality, with a little spice, for the hottest room this side of the border.

Buzio’s Seafood Restaurant
Fresh seafood from the docks and traditional New England fare is featured at this gracious restaurant, offering outstanding views of the Rio’s Ipanema Beach and sparkling swimming pools.

Enjoy the casually elegant atmosphere of Buzio’s, offering seating for large groups as well as more intimate occasions, and single seating at Buzio’s fresh oyster bar overlooking an open kitchen.

Buzio’s is open daily for dinner from 5 p.m.-11 p.m. And is located near the pool entrance. A private dining room is available for parties up to 100.

Carnival World Buffet
Recognized as the best buffet in Vegas year after year by guests and critics alike, the Carnival World Buffet has raised the bar in buffet dining once again, offering more variety in food choices (more than 300 dishes prepared fresh daily) and a new contemporary design that make the best buffet in Vegas even better.

From pizza to omelets, sushi to teppan yaki, fresh carved meats to Asian barbecue, the Carnival World Buffet offers numerous distinct dining experiences from around the world featuring live-action cooking right before your eyes guaranteeing freshness and top quality.

Enjoy more than 70 varieties of homemade pies, cakes and pastries, and nine gelato flavors, all made from scratch by our Chef, Randy Sebastian, ranked one of the top 10 pastry chefs in the United States and a first place winner at the 2003 National Pastry Championship.

Gaylord India Restaurant
Gaylord India Restaurant, an award-winning San Francisco mainstay for nearly three decades, has served presidents, prime ministers, ambassadors, senators, mayors, rock stars & celebrities. Gaylord India Restaurant serves Northern Indian cuisine, featuring authentic Tandoori and Mughlai-style dishes.

Dine in a warm, romantic setting, with rich jewel tone fabrics, deep finished woods and gorgeous authentic Indian artifacts.

Entree specialties include tandoori chicken, prawns and salmon, assorted meat kabobs, fragrant lamb curries, exquisite chicken curries and seafood delicacies, such as prawn vindaloo and fish tikka masala (fish cubes cooked in a spicy sauce). Fresh homemade breads baked in tandoori ovens await, as well as a tempting array of savory rice dishes or “biryani.”

Meatless specialties are available, as well as a special dessert menu, which features kulfi (saffron-flavored ice cream with pistachios) and the classic treat, gulab jamun (sweet cheese rounds dipped in syrup). Or diners may select from combination dinners with a number of dishes available for one price.

Hamada’s Asiana
Hamada’s Asiana combines Japanese Teppanyaki exhibition table-side cooking with fresh sushi and an exotic menu featuring traditional Japanese dishes.

Favorites such as sushi, sashimi, steaks, teriyaki, tempura, shabu shabu, sukiyaki and yakitori are served in a choice of locations including the dining room, teppanyaki room and cocktail lounge, or while sitting at the sushi bar.

A Vegas favorite with over several restaurants in the Las Vegas Valley, Hamada has been honored numerous times by the readers of the Las Vegas Review-Journal in their Best of Las Vegas poll. In addition the Zagat Restaurant Guide ranks Hamada as the top rated Japanese Restaurant in Nevada.

Janelas, the new restaurant at Rio Secco Golf Club, is a terrific place to relax and enjoy a great meal. Enjoy breakfast items like eggs Benedict, appetizers like shrimp scampi and entrees like steak sandwich or West Indies chicken pasta and more.

Visit Mah Jong Chinese Noodle Bar, featuring the best Asian chefs specializing in authentic Cantonese and Chinese dishes.

São Paulo Cafe
São Paulo Cafe offers international favorites and features a large selection of appetizers, salads, entrees and spectacular desserts.

Choose from traditional American fare along with a variety of international favorites, including a separate Chinese menu.

Sports Kitchen
For race and sports fans who don’t want to miss any of the action, the Rio has opened the convenient and upscale Sports Kitchen, serving burgers, bratwursts, wood-fired pizzas, homemade sandwiches and other sport specialties.

You can even watch pizzas being made and sandwiches being prepared right in front of you. A special highlight is the enormous fire pit in the center of the area.

Tilted Kilt
Enjoy an Irish-American tavern experience, with a lively mix of contemporary and traditional elements.

Ubiquitous pub favorites, such as billiards and darts are offered, along with an extensive list of beers from around the world.

From Drunken Clams steamed in beer to Sloppy Janes (a colossal sandwich spin-off of Sloppy Joes), the unpredictable menu features delicious appetizers, entrees and desserts designed for hearty appetites.

Village Seafood Buffet

Wine Cellar & Tasting Room
The Wine Cellar at the Rio Suites Hotel and Casino is Las Vegas’s most famous wine bar and retail shop and is home to one of the most impressive public wine collections in the United States.

The Wine Cellar showcases some 50,000 bottles valued at more than $10 million. As you stroll upon rustic rock tile and pass through rock and brick archways, you’ll come across rare museum pieces like a bottle of 1800 Madeira from the cellar of Thomas Jefferson or the 1855 to 1990 vertical collection of Chateau d’Yquem, valued at $2 million.

Ipanema Beach
A tropical paradise awaits in the Rio’s famous Ipanema Beach. Lounging upon real sand beaches at the edge of a tropical lagoon, you are surrounded by cascading waterfalls, four swimming pools and five Jacuzzi-style spas.

Allow the Ipanema Beach to pamper you as you bask in the sun with a variety of services including poolside cocktail, food service and private cabana rentals. Lifeguards are on duty daily.
